Professional gastronomy activity supporting an international travel programme
Travel-trade relevance

Built to strengthen your programme. Not replace your role.

The travel partner keeps the client, the overall itinerary and the commercial relationship. Arctic Appetites contributes specialist gastronomic content, qualified Norway-side coordination and connections between the programme and relevant international market activity.

01

Tour operators & travel agencies

Distinctive, sellable Norway content for clients seeking more than a generic destination programme.

02

DMCs & PCOs

A specialist gastronomy layer that can sit inside a professionally operated itinerary or event.

03

Luxury & culinary travel

Small-scale access, credible hosts and strong origin stories shaped for high-value guests.

04

MICE & incentive partners

Gastronomic elements that give meetings, incentives and professional groups a stronger sense of place.

A specialist layer

Gastronomy with operational context.

A strong food story is not yet a travel product. It becomes useful to the trade when the right audience, capacity, timing, price, host, transport logic, responsibility and booking path are clear.

01
Product qualification

Assess the experience against the brief, guest profile, group size, season, accessibility and commercial reality.

02
Gastronomy-led modules

Connect producers, chefs, restaurants, accommodation, landscape and culture in a coherent programme element.

03
Professional access

Coordinate relevant meetings, producer encounters, tastings and specialist hosts where capacity and fit are confirmed.

04
Market-facing language

Translate local strengths into information a buyer can understand, assess and present to a client.

05
Pre- and post-visit activation

Use market relationships, presentations and follow-up to make the programme part of a longer commercial path.

The demand signal

Food matters. The programme still has to be bookable.

Innovasjon Norge’s 2025 summer visitor survey shows rising interest in food experiences and higher spending among food-interested visitors. That creates an opportunity — but only when the experience is shaped for the right market and can be delivered consistently.

43%

wanted food experiences

Among surveyed foreign holiday visitors in summer 2025, up from 36% in 2024.

NOK 2,030

average daily spend

Reported for visitors interested in food experiences.

Nature + culture

work together

Most visitors combine both; visitors placing more weight on culture spend more than those focused mainly on nature and outdoor activity.

Possible programme components

Developed around the brief.

No fixed package is forced onto the client. Components are selected only when they serve the target group, route, season and commercial objective.

01

Producer encounters

Source-led visits with capacity, hosting and timing qualified in advance.

02

Chef & restaurant access

Meals, demonstrations or professional exchanges with a clear role in the programme.

03

FAM, press & professional visits

Small-group programmes designed for learning, assessment and relationship building.

04

MICE & incentive elements

Place-specific gastronomy within a wider itinerary operated by the travel partner.

05

Market testing

Professional feedback before a regional concept is presented as market-ready.

06

Commercial follow-through

Structured follow-up, introductions and trade development where relevant after the visit.

Working process

From brief to follow-through.

The process protects the travel partner’s client relationship and prevents unqualified local assets from being presented as finished products.

01

Brief

Audience, commercial objective, group profile, timing and operating partner.

02

Qualify

Capacity, price, season, host readiness, logistics and responsibility.

03

Build

A coherent gastronomic module connected to place, stay and route.

04

Activate

Relevant market presentation, professional visit or client programme.

05

Follow through

Feedback, relationship development and commercial next steps where justified.

Documented work

Cases shown by status.

Delivered activity is separated from development work. Named organisations are included only where public evidence supports the relationship. A conversation, proposal or pilot is never presented as a completed travel programme.

Norwegian cider evaluated by a gastronomy professional in Barcelona
Delivered / active · Barcelona · 2025–2026

From Norwegian origin to Spanish luxury hospitality.

Challenge

Move selected Norwegian craft cider beyond one-off visibility and into a professional market context where hospitality teams and guests could experience it.

Arctic Appetites’ role

Established Spain-side import, storage and distribution capability; led product introduction, professional tasting activity and hospitality follow-up.

Documented result

Nordic Cider Affair on 26 May 2025 introduced Norwegian cider to Barcelona F&B professionals, buyers, sommeliers and media. A later signed collaboration placed selected Norwegian cider at Bar Gebre and 173 Rooftop Terrace at InterContinental Barcelona.

What it demonstrates

Origin stories become commercially useful when product access, professional understanding, local operations and follow-up exist together.

Ryfylke cider presented as part of Norwegian gastronomy market development
Development case · Rogaland ↔ Spain · 2026

Qualifying a regional gastronomy route before promising delivery.

Challenge

Connect regional producers, destinations and food experiences with international market access without presenting an early concept as a finished, bookable product.

Documented work

Mapped relevant food and travel assets, contacted regional stakeholders, explored possible Spanish travel-trade and HoReCa routes, and developed qualification criteria covering capacity, pricing, seasonality, hosting and commercial responsibility.

Verified status

Development only. No completed tour, purchase order or travel-trade agreement is claimed. The work identified the need for clear bookable modules, operating roles, buyer fit and post-visit follow-up before market launch.

What it demonstrates

Market readiness starts with disciplined qualification. Transparency about what is ready — and what is not — protects the region, the travel partner and the client.

Documentation: project records, stakeholder correspondence and market-dialogue notes, 2026.

Clear commercial roles

One programme. Defined responsibility.

The exact split is agreed for each assignment. The principle is simple: the travel operator remains the travel operator; Arctic Appetites is the specialist market and gastronomy layer.
